The Best Sourdough Brownies Made with Fresh Milled Flour
Fresh milling my own flour has been an absolute blast! I am loving coming up with all my own recipes like my basic sandwich loaf, cinnamon raisin loaf, double chocolate chip muffins, and orange chocolate chip muffins. YUM. And no matter how much magnesium I supplement with I am still a raving chocolate fiend. So I put together this sourdough brownie recipe with fresh milled flour to satisfy those end of the day cravings for something a little more decadent. I hope you enjoy! Why Fresh Milled Flour?
The health benefits of freshly milled flour are enormous! The eponymous Sue Becker introduced me to freshly milled flour recently and I am loving it, and so are my kids!! Freshly milled whole wheat flour maintains the entire nutritional profile of God’s gift of wheat to mankind.
Wheat has at least 45 essential nutrients for the human body, including magnesium, vitamin E, and iodine. When we buy conventional AP flour it is usually bleached with a chlorine derivative and is completely stripped of all these wonderful nutrients. Then the food companies put back in synthetic versions of just five of the nutrients lost, and call it “enriched.”
When we use whole wheat berries we preserve not only the vital nutrients for a thriving life we also maintain the fiber content of wheat. Are you dealing with constipation? Freshly milled whole wheat could fix that!
God is an amazing Creator who gave us every good thing. Why not just use the food God gave us as He intended it to be used? Freshly milled flour is the healthiest way to consume wheat.
Man can not live on bread alone but God loves bread!

Ingredients for Sourdough Brownies with Fresh Milled Flour
Wet
- 1/2 cup sourdough (discard or active)
- 1/4 cup maple syrup
- 1/2 cup brown sugar (packed)
- 2 large eggs
- 1 tsp vanilla extract
- 1 stick salted butter (melted)
- 1 tsp brewed coffee (optional)
Dry
- 1 cup fresh milled hard wheat flour (can sub AP)
- 1 1/2 tsp baking powder (aluminum free)
- 1/2 cup raw cacao powder (can sub cocoa powder)
- 3 tbsp collagen powder (optional)
- 1 cup semi sweet chocolate chips

Instructions for Brownies with Fresh Milled Flour
Begin by preheating your oven to 385 degrees Fahrenheit.


Wet Ingredients
Then, in a large mixing bowl, mix your sourdough discard (or active sourdough starter) with maple syrup, brown sugar, eggs, and vanilla using a dough whisk.
Next, pour the melted butter into the wet mix while whisking. Add the last of the wet ingredients, the brewed coffee if you are using it. I highly recommend this little added ingredient, as it deepens the flavor of the chocolate.



Dry Ingredients
Now it’s time to mix the dry ingredients. So turn on your grain mill and mill your flour fresh.
In a separate and smaller bowl, mix together the fresh milled flour, baking powder, raw cacao powder, and collagen powder (if you are using it). I add in the collagen as an added health benefit. You definitely don’t need it but this recipe is a great place to sneak a little more into your diet!



Then, add the dry mix to the wet, using the dough whisk to thoroughly combine.
Lastly, fold the chocolate chips into the batter. If you are a real chocolate lover you can add another 1/2 cup of chocolate chips!


Bake
To finish, butter a 6×8 glass pan and pour the brownie mix in so it’s level.
Then bake at 385 degrees F for 21-24 minutes.
Cool and enjoy! Yum.

Brownies keep for 3 days on the countertop.. if they last that long!
