Lodge Dutch Oven

A large dutch oven is the perfect thing to fry in!

Stainless Steel Spider Strainer

This spider strainer is game changing when it comes to fried foods. Quickly and easily scoop out your french fries, while allowing the oil to strain off them.

Metal Mixing Bowl

A metal mixing bowl is a kitchen must have. You will need some kind of large bowl to soak your potatoes in and to toss your french fries with salt.

Cotton Tea Towel

You will need a tea towel to dry your potatoes before frying them.

Ingredients

  • 6-8 good sized golden potatoes
  • 2-3 cups beef tallow
  • salt to taste

Instructions

Soak

Begin the morning or afternoon you plan on making your beef tallow french fries. Start by washing the potatoes. You do not have to peel your potatoes but you can if you prefer. Cut the potatoes into 1/2 inch strips.

Net, fill a large mxing bowl with cold water. Then, place all the potato strips into the water. Soak the potatoes for at least one hour. If you want, you can cover the bowl with plastic wrap and place it in the fridge for up to 24 hours.

When you are ready to fry your beef tallow french fries, pour the potatoes into a colander and allow the water to drain off. Then, lay a cotton tea towel on the countertop and spread the potato strips out evenly on it. Using another tea towel, cover all the potato strips and pat them as dry as possible.

To fry, heat 2-3 cups of beef tallow in a dutch oven on high heat. You can check if the oil is hot enough by pouring a droplet of water into it. If it sizzles and cracks then it is hot enough.

When the tallow is up to temperature, carefully place the potato strips into the dutch oven using a spider strainer. Be careful not to splash hot oil out as you put the potatoes in. Place as many fries as will fit comfortably in the oil. Do not overcrowd the pot. Allow the potatoes to fry for five minutes and then remove them with the spider strainer. Place them in a large mixing bowl off to the side.

Continue to fry the remaining potato strips in the same manner. You should be able to fry this amount of potatoes in 2-3 batches at the most.

Next, fry all the french fries for a second time in the exact same manner. Meaning, fry in 2-3 batches for 5 minutes and then remove them and place them in the large mixing bowl. The double fry is the key to crispy french fries!

Notes

These reheat extremely well in an air fryer.

You can experiment on the size and shape of the french fries as you like.

Do not skip soaking the potatoes. This pulls starch out of the potatoes and makes them even crispier.
